Food Sampling
A representative sample that is appropriately transported to the laboratory is the first priority in the microbiological or chemical examination of any food product. Laboratory results and their interpretation are valid only when appropriate samples are examined. Samples must be representative of the entire lot of material under evaluation, must be the proper type for the determination to be made, and must be protected against extraneous contamination and improper handling.
